Green Eggs & …… certainly not Ham

Inspired from Dr. Seuss children’s book “Green Eggs and ham”. Some Muslims families either give-up this nice book because of the “ham” or they change the book to Green Eggs and Jam.

Anyways, why not have some fun with your food! Not only it brings back childhood memories, it’s also a nice kid-pleaser in parties and brings humor to the family.

INGREDIENTS

4 Eggs

2 cups fresh basil, washed and dried

2 cloves roasted garlic, chopped

1/4 cup grated Parmesan, optional

1/2 cup extra-virgin olive

1/3 cup pine nuts or walnuts

Salt and freshly ground black pepper to taste

To prepare eggs: place eggs in a saucepan, covered by at least an inch or two of cold water, and bring to boil over high heat. When water starts to boil turn off heat and let it sit for 14 – 15 minutes.

To prepare pesto: in a food processor, mix basil, garlic, nuts and cheese on low speed, then slowly add the olive oil until blended into a smooth sauce (Do not over mix). Add salt and seasoning to taste.

To serve: either cut eggs in half and place on a serving plate with pesto sauce as a dip. Or you can cut eggs in half and remove the yolk from the white. In a mixing bowl, mix yolk with desired amount of pesto to meet your taste. form a thick past, then with a spoon scope a tablespoon of the paste and place back into the egg whites where the yolk was. Serve as an appetizer.
